Going by just the base game, I'd say either the theme for Electrodrome, Dolphin Shoals, or Rainbow Road. But to be honest, the music in the DLC tracks is much better than any of the music in the base game. My favorite is Super Bell Subway's music, but obviously the F-Zero tracks have fantastic remixes of their original songs.
