The Yoshi, though his standard move is useless on enemies with at least 1 point of defense, I always like having the little tough baby Yoshi following you.

Probably Admiral Bobbery because he was a ton of fun to use. He had really interesting moves, and exploding random objects and enemies within the surroundings was always something fun to do in the past.

I would say Princess Peach but I wasn't to fond of/off {whatever it is >.>) her segments in the game.

And I pretty much just meant partners, Peach really only had those small segments in the game where you move as her a bit, though those were actually kinda fun in my opinion.
